It seems obvious that this *should* be a trustworthy source, but just to be sure, what do yall think of this book?

    It’s the friggin US Department of Agriculture. Good Lord! Who do you think tested all the recipes we use?

  3. All of these recipes are repeatedly tested for taste and safety by USDA and several universities. It **is** a trustworthy source.

    I appreciate you sharing the book and evaluating if the recipes are safe. I’ve seen too many canning books that have unsafe recipes and advice. (Not by well known canning authorities such as the USDA, considering they’re the OG canning resource)

    I looked this book up fairly recently. A few years ago a MFP emailed NCHFP about the Amazon listing for this and they said it’s not authentic and has errors. Not 100% sure if it was just the Amazon listing that had errors or if it’s the entire book regardless of where you bought it. It seems to be copied from the NCHFP/USDA, but not published by them.

    I’d go through the recipes and compare them to the NCHFP online versions, just in case there are errors.
