I bought this ribeye from the grocery store today, to cook and eat today. I noticed as I was cutting it up, there was some weird coloring going on inside and some light browning on the edge. Definitely passed the smell test but kind of got me a little nervous. Going to eat it anyway and will report back but wanted to see if anyone had any input. Thanks!

    It looks perfectly fine. From my experience, it looks like a steak cut down from a ribeye roast from the previous day. I’d eat it.

    This is normal, we refer to it as a ring or halo. All meat gets this usually after the first day it’s been cut. When reworking roasts into steaks or stir fry they will always have it. Perfectly safe to eat. I cut it out if it’s prominent enough since people will think the meats bad when it actually isn’t.

    Are you talking about the slight brown on the inside?
    That’s oxidation, totally normal. If it passes the sniff test too, good to go.

    So, most processed meats are packaged with a tiny amount of carbon monoxide. It is a color stabilizer. This prevents the outside from oxidizing, where it was exposed to the gas. But the inside still oxidizes a bit. This is completely normal, and actually means the beef is probably pretty fresh. You can look all of this up, but its good to go.

  11. It’s fine. Was most likely cut the day before and ready to be sold as a big roast.. when it didn’t they cut into steaks the next day. It’s normal. Enjoy it.
