An easy low carb gnocchi recipe with a sauce inspired by wild asparagus risotto from Sardinia. My mom is Italian so naturally, I love pasta but having to restrict my carb intake has caused some cultural dissonance. I’ve tried a bunch of low carb pasta options, but to be honest, virtually all of them have the same impact on my glucose as regular pasta, so there is little point in having a worse tasting alternative for a negligible impact. These gnocchi, however, are just as pillowy and melt-in-your-mouth dumpling delicious as traditional flour and potato ones with minimal impact on my glucose – win/win! My mom is from Sardinia, so I wanted to reinterpret a traditional Sardinian wild asparagus risotto to honor my blood while managing its glucose. 😀
