Continuing my mission to make as many sandwiches from The Encyclopedia of Sandwiches (by Susan Russo) as I can, #7 is the veggie sandwich. Hummus, cucumber, radish, tomato, and sprouts on multi grain, it was like a salad in between 2 slices of bread. Nice and fresh! It's killing me that I mixed up the order of tomato and radish for the picture but oh well. Next time I would add hummus to both sides and wrap it or something to avoid veggie slide.

Oh my gosh this looks amazing. I love veggie sandwiches. The crunch of the vegetables, with the soft bread…🤌🤌

If they ever come out with another edition, they should make this the new photo for this sandwich.

Cashews are delicious in a sandwich like this too.

How dare you screw up the radish/tomato order. Picture is ruined. Straight to jail.

Ha I was going to call you on the mixed-up veggie order but it’s only because it’s so flawless that it became a game to find the difference.
Top level sandwich making. Please continue to share with us. 🤘🏼

Veggie sandwich is a hard thing to balance, but it looks like this beauty has got all the right ingredients to make it work (though I would probably add red onion if it’s not already there).
