As long as the jar is still halfway full or more, it is still safe. Anything above the liquid line may change color, but it’s still safe.
However, it looks like you oven canned the jars? That is not a safe method of canning. My above paragraph applies to water bath or pressure canned jars.

It’s not too much siphoning, but what recipe and method did you use? Are they just on the baking sheet to cool or did you oven can?
