    I should add that final resting temp was 136. It rose 11 degrees from initial rest pre sear.

    Perfect medium. This is literally my perfect cook and seasoning and cut.

    Wonderful sear, perfect med rare. Nice work on watching that temp.

    Thicker steaks are more forgiving. Very little room for error with thinner steaks.
