Might just be the craziest sauce color ever. Recipe is for single serving, so scale as needed. Definitely roast the beets and potatoes at the same time.

That’s…. weird. I can’t even imagine what that tastes like. Potatoes are earthy on their own, but beets taste like dirt smells. Sooo… nutty and earthy…a little sweetness? Is it like Kung pao without the heat?
I hate beets, so I’d never try it, but if you like it, good on you man. Barbie would love it!
