Continuing my mission to make as many sandwiches from The Encyclopedia of Sandwiches as I can, #8 is the caprese sandwich. It's meatless Monday! Following meatless Sunday apparently. This was nice. Tasted like an appetizer thing. The basil had the most flavour, but I still liked the fresh mozzerella, even though it had a way more mild flavour than I expected. Salt and peppah on the tomatoes, and extra virgin olive oil on top.

    I like to make this sandwich with roasted red pepper subbed for the tomato when tomatoes are not in season.

    I dont understand these. They look subpar in the book and in real life. Controversial. That’s a cheap ass, yucky, crusty, musty, dusty hot dog bun. I don’t get it. Dont get me wrong. A+ on replicating what you see. But whoever made this book on sandwiches should be arrested.

    To me homemade pesto on these is much better than just straight up basil. I also like to broil the mozz and occasionally I’ll use good sun dried tomatoes instead of fresh.

    If you like spicy food, red pepper or a vinegar based hot sauce goes really well with it!
