Could not make it yesterday because I was traveling back home, but feel proud I put effort today into this!
Breakfast: overnight oats with chia seeds and greek yogurt
Lunch: sautéed chicken breasts and baked sweet potato/brussels /sprouts /baby bella mushrooms
Dinner this week will be a protein shake.
All ingredients are in the photos
For the chicken, season it and cook at medium for about 5 minutes and then toss the peppers and add the vinegar, cover and stir occasionally. When water is reduced, uncover and let it dry a bit until it thickens.
Vegetables: cut, season, place in baking sheet or pan and bale at 350° for about 45 minutes.

*** the sautéed chicken yielded 5 portions, so I have an extra serving in the fridge.
