This week’s lunches:
• Cannellini beans – I used dried and cooked them in the pressure cooker for 50mins in salted water.
• Tuna
• Red onion
• Rocket
• Blanched green beans
• Cherry tomatoes
• Sliced black olives
• Vinaigrette with olive oil, lemon, apple cider vinegar and a bit of garlic, salt & pepper

Forgot to mention the six-minute eggs!
Very nice – I’ve been getting into beans via https://www.ranchogordo.com – heirloom beans – who knew? They have a subscription box option and so there’s a bit of mystery involved.
So far have tried chilis with Buckeye, Royal Corona, and Marcella beans – the RC are these giant white beans with the consistency of potatoes. Crazy good.
Will make a note to add beans to salads next time – those look tasty.

Would cold, cooked pasta go well, mixed in?
