I'm located in the upstate of South Carolina and we have no power, so I got creative with my bread! I baked this loaf over a fire and did not do a cold ferment.
Recipe:
500g bread flour (300 white, 200 whole wheat)
60g starter
300g water
12 pink Himalayan salt
After mixing all ingredients, I did 4 rounds of stretch and folds then let it bulk ferment over night (about 13hrs.)
After shaping, I tried to place it in a cooler, but that didn't stay cold very long, then I blasted my cars AC on it for a short time, but that probably wasn't practical lol then I decided to bake it – so almost 20hrs later!
I half haphazardly placed it in my dutch oven and put it on a grate above the coal with a grill cover to try to help trap the heat.
I baked it covered with a lid and grill top for 30min. Then I uncovered it with the lid, but kept the grill cover on for 20min.
It may be my best loaf haha

It’s not often that the bottom crust is the darkest, unless it’s pizza. Looks gorgeous though.
