Dined at the one-star Michelin restaurant in Seville last night and wanted to share some thoughts for anyone traveling there for fine dining!
While the presentation of every dish was well-executed, the flavor, complexity, and texture of each dish was hit or miss. Most dishes were one-note in terms of flavor, especially when most of the brown reductions tasted incredibly similar across three dishes.
Texturally, most of the dishes were soft and the “crunch” component was either soggy or not big enough to counterbalance.
With that said, the wine pairing was excellent and the second-to-last dessert (first picture) was absolutely delightful!
Overall, 6.5/10 and had a much better meal at Desacato (which is more centrally located as well).
