Hello, I canned these potatoes last night following the recipe in my T-Fal pressure canning manual. Will the ones that have one or two sticking out of the water be safe to store or should they be ate within the next few weeks? Par boiled for 10 minutes, hot packed, pressure canned for 35 minutes at 14 lbs for 6500 ft elevation.

    It’s totally fine. You followed a safe recipe and safe procedures. There’s going to be some liquid loss – it’s normal.
