I’m wondering if my loaves are under proof or over proofed. I cold proofed both loaves in the fridge for 24 hours. I did have some trouble with shaping/tightening as the dough was a bit sticky. For baking, I did the first loaf at 450 – 20 mins with lid on and 400 – 25 mins with lid off. For the second loaf I did it at 450 – 20 mins with lid on and 22 mins with lid off (didn’t lower the temp). Had some issues scoring as the razor didn’t want to cut properly.
I used a 700 yr old starter that I got originally dehydrated (usually triples in about 8-10 hours).
