Newbie question: should I drain the juice that was in the vacuum seal of this sirloin before hitting it with s&p?

    Absolutely. Don’t just drain it. Pat that steak dry with paper towels. Moisture will affect your sear and turn into a steam. You don’t want steamed steak.
