Wow. Chuck steak is really good! The crisped up fat parts were delicious!

    I love all butcher’s cuts (well, with the exception of flank…) but chuck eye is imo a cut that transcends from that classification and into top-tier category along with the all usual suspect premium cuts – it’s just such an absolutely fantastic steak and one that would fool any non-sicko into thinking it was a ribeye or perhaps even a more fatty NY; only problem is there’s not much of it available from the chuck so most butcher’s don’t even stock it

    Try cross rib if you like chuck. It’s part of the chuck, but much more tender while retaining that great chuck flavor.
