    As a tri-tip guy, this is confusing to me. Not saying it’s wrong, I’m sure it was amazing, just never seen in-tact rendered marbling like that in a cooked, hot tri-tip. I also know nothing about smoking so that’s probably why

    It looks like none of the fat has rendered at all do you eat it like that since I’m assuming the smoking cures it in some way or are you searing cuts of it after?
