    Maybe not the best video for this process. I usually keep my meat wrapped for the rest. I’m not sure if others do the same (?).

    I unwrapped this right off the grill because I was hoping to shorten the rest period.

    I like trying new things and I wanted a twist on Italian beef. Using pecan wood chunks for smoke, throughout the cooking process I intermittenly sprinkled an entire packet of Louie’s Italian Beef seasoning on a pork shoulder.
