You guys can roast me, but I am a week into my diet and that just so happens to be between paychecks, I’m running on scraps. 😅

Took a gander at pork for the first time, pan-fried w/ onion powder, garlic powder, and lemon pepper. Turned out perfect and kinda shocked me. Rice is simple—salt, pepper, a little bit of buffalo sauce.

If I had any groceries(again, between paydays), I would’ve added some broccoli and soy sauce at least and stir fried it all, but it turned out pretty good.

Lean pork is protein dense and brown rice is rich in fiber, so these two foods together help you recover after a workout and stay full for longer.

Rundown:

1 lbs pork chops (4oz serving size)
3 cups dry brown rice (1 cup cooked serving size)
1-2 tbsp butter (can use oil, I don’t stress butter)

Butter pan and bring to heat. Cook pork chops 4-5 minutes on medium high and flip, don’t forget your seasoning!

Use 1 cup water / 1 cup dry rice, add to pot and bring to a boil. Drop to medium heat and let simmer for 10 minutes or until all water has soaked into rice. Fluff with fork. You can add seasoning during or after cooking—I prefer salt and pepper while rice is cooking and sauce after.

This brings each meal to ~550 calories—a modest and healthy, protein and fiber rich plate in under 20 minutes.

I know this type of thing is a no brainer and second nature to some of you, but some people don’t start prepping (or dieting for that matter) because they simply don’t understand how easy cooking can be sometimes. I hope I helped someone find an easy dinner to make tonight.
