    I am assuming you used Babish’s recipe? I made it once, loved the flavor but hated the texture. Everything became too soggy. Honestly I had thought of making a inspired version where I made crispy veggie chips out of sturdier veggies and then dip them in the sauce.

    Next time use a mandoline slicer, and use one that has a guard so you don’t have to worry about cutting yourself. This will cut your prep time in half.

    Wow it looks beautiful but must have been tedious! What’s in it? Looks like zucchini, yellow squash, tomato, red potato?

    I love making ratatouille just not like this. I like to crisp the veggies in the oven first then mix into the sauce.

    Fun fact: the signature dish Rémy serves at the end of Ratatouille isn’t technically a ratatouille; it’s a tian, which is an artful arrangement of sliced summer vegetables baked over a tomato and pepper sauce. Ratatouille, on the other hand, is a much more of a rustic stew.

    Who cares though? That looks delicious!

    You did an amazing job!! I made this when Ratatouille came out for my kids and they loved it!!! Very time consuming but it looks amazing!!

    It doesn’t have to be layered like that, you know. Julia Child’s recipe involves dicing the veggies and tossing it all in there atop the sauce. The Disney version is pleasing to the eye, but it doesn’t have to be taxing like you say.

    America’s Test Kitchen has a rustic sheet tray oven roasted ratatouille recipe that is pretty darned good. I used to make it regularly when the kids were still at home. The recipe is simple enough that I would make it for weeknight dinner.

    It is a great way to use up a bunch of vegetables, very flexible and flavorful. One time, my son said he didn’t like eggplant when I was serving eggplant parmigiana and I said really, you’ve been eating it in the ratatouille for two years.

    I understand the formal presentation is gorgeous but considering how laborious the process is you can make a pretty darn good tasty version with rough chopped veggies roasted on a sheet tray.
