I love wings, both making them at home and buying them from our local wing shops. When it comes to homemade wings, the charcoal grill is king.

  1. These were the leftovers. Salted and let to dry 24hrs in the fridge. Baking powder coating as they hit the grill.

    Best wings I ever made was by accident on the grill. Some latecomers to a cookout brought some marinated wings and since there was still plenty of food left, I threw the wings on the grill and promptly forgot about them. By that time the coals were already dying so I put them on direct heat. After an hour I suddenly remembered the wings and expected a charred mess but instead the fat rendered perfectly and the results were mahogany colored beauties with a papery crispy skin.
