a recent hobby of mine’s been talking to restaurant founders – starting from my own friend who owns a northern vietnamese pho shop in chinatown. A lot of nyc restaurant owners seem to come from all over the place and it’s been interesting hearing their story on how they got into the grind of running restaurants for a living.
