Had to use an egg substitute (my kid is allergic) but came out well.

Slow cooked the sauce over six hours. Seared the meat first followed by veggies, deglazed pan, added remaining ingredients and beef, simmered for six hours. Pasta was hand kneaded, rolled, and cut, then cooked fresh.
Ragu: -2 tbsp Olive Oil -2.5 lbs Chuck Roast 1/2 Cup Red Wine 1/2 Cup Beef Broth 1 can crushed tomato 3 tbsp tomato paste 5 garlic cloves 1 onion 2 carrots Seasoned to taste
Pappardelle: 400g All Purpose 4 eggs (substitute used here) 1 tbsp EVOO 1/4 tspn sea salt
