Ingredients:

Chicken thighs
Pumpkin
Thyme
Ras el Hanout
Tomato
Coriander seeds
Garlic
White onion
Red bell pepper
Orange bell pepper
Coral lentils
Cumin
Chicken broth
Chickpeas
Lemon
Fresh cilantro

Instructions:

Prepare the Chicken & Pumpkin
Coat the chicken thighs with olive oil and Ras el Hanout. Place on a baking tray. Peel and dice the pumpkin, and add to the same tray. Season everything with thyme, salt, and pepper. Add a whole tomato to the tray and roast in a preheated oven at 180°C (350°F) for about 25 minutes.

Spice Preparation
In a mortar, crush the coriander seeds and set aside.

Sauté the Veggies
In a large pot, sauté the minced garlic in olive oil until golden, then add finely chopped onion and let it cook until soft. Add the diced red and orange bell peppers and cook until they start to brown.

Cook the Lentils
Add the coral lentils, crushed coriander seeds, Ras el Hanout, and cumin to the pot. Stir well, then pour in the chicken broth (four times the amount of lentils). Let it simmer for about 20 minutes over medium-low heat.

Finish the Stew
When the lentils are almost done (about 5 minutes left), add the roasted pumpkin and chickpeas. Mix everything together and let it cook for the remaining time.

Add Final Touches
Off the heat, stir in the lemon juice, lemon zest, and freshly chopped cilantro.

Prepare the Tomato
Peel the roasted tomato, quarter it, and set aside for garnishing.

Presentation:
In a deep plate, ladle the lentil and chickpea stew.
Place a roasted chicken thigh on top.
Garnish with the roasted tomato quarters and a sprinkle of fresh cilantro.
