This recipe (with a couple of easy tweaks to replace butter and chicken stock with olive oil and veg stock) is one of my favorite goto meal prep options. Its great on its own, with beans and avocado, in tacos, or even just a base for a grain bowl.
Warning, Chef John is well-known for his love of cayenne and spicy food. Not that I don’t love spice, but this one was hella hot the first time I made it, even for me. You can still add smoky flavor by replacing the chipotle powder with smoked sweet paprika if you want to cut the heat. For me, I just cut the chipotle powder in half.
I make this about twice a month. It’s chewy, spicy, and just plain satisfying. It’s also a great dish to make for eating with others who are not plant-based, as you can add chunks of meat instead of (or with) beans and mushrooms to some of it for them.
Great mixed with hummus and veggies in a wrap. It’s a flavor bomb.
