Ingredients:

Mexican Seasoning:

RED CHILLI POWDER 1 TBSP
CUMIN POWDER 2 TSP
CORIANDER POWDER 1 TSP
OREGANO 2 TSP
SALT 1 TSP
GARLIC POWDER 2 TSP
ONION POWDER 2 TSP
Paneer & Veggies
OIL 1 TBSP
ONION 1 LARGE SIZED. (DICED)
MIXED BELL PEPPERS 1 CUP (DICED)
PANEER 300 GRAMS (DICED)
MEXICAN SEASONING 1.5 TBSP
LEMON JUICE OF 1/2 A LEMON
SALT A PINCH

Refried Beans:

RAJMA 1/2 CUP (SOAKED & COOKED)
OIL 1 TBSP
ONION 1 LARGE (CHOPPED)
GARLIC 2 TBSP (CHOPPED)
JALAPENO 1 NO. (CHOPPED)
TOMATO 1 NO. (GRATED)
MEXICAN SEASONING 1 TBSP
SALT A PINCH
HOT WATER VERY LITTLE
SALT IF REQUIRED

Lemon Coriander Rice:

BUTTER 2 TBSP
COOKED RICE 3 CUPS
FRESH CORIANDER A LARGE HANDFUL (CHOPPED)
LEMON JUICE OF HALF A LEMON
SALT TO TASTE

Pico De Gallo:

ONION 1 LARGE SIZED. (CHOPPED)
TOMATO 1 LARGE SIZED. (CHOPPED)
JALAPENO 1 NO. (CHOPPED)
FRESH CORIANDER A HANDFUL (CHOPPED)
LEMON JUICE 1 TSP
SALT A PINCH
SWEET CORN 1/3 CUP (BOILED)

Burrito Sauce:

THICK CURD 3/4 CUP
KETCHUP 2 TBSP
RED CHILLI SAUCE 1 TBSP
LEMON JUICE | 1 TSP
MEXICAN SEASONING 1 TSP
GARLIC 4 CLOVES (GRATED)

Burrito:

LETTUCE AS REQUIRED (SHREDDED)
AVOCADO AS REQUIRED (DICED)
TORTILLA S REQUIRED
LEMON CORIANDER RICE
REFRIED BEANS
LETTUCE
PANEER & VEGGIES
PICO DE GALLO
AVOCADO
BURRITO SAUCE
PROCESSED CHEESE AS REQUIRED (OPTIONAL)

Method:
Add all the powdered spices of the seasoning into a mixer jar & grind it together to make the Mexican seasoning, you can also just add all the spices into a jar or a bowl & mix them.
Set a kadhai over high flame, add oil & let it get hot.
Add onion, mixed bell peppers, paneer & the remaining ingredients & cook over high flame for 2-3 minutes, the paneer & veggies are ready.
Soak ½ cup rajma overnight & then pressure cook for 5 whistles, add water above an inch from the level of rajma & also add one cinnamon stick.
Set a kadhai over high flame, add oil & let it get hot, then add onion, garlic & jalapeno/green chilli, stir well & cook over high flame until the onion starts to turn light golden brown.
Grate & add the tomato along with Mexican seasoning & salt, stir well & add a splash of hot water & cook over high flame for a couple of minutes.
Further add the boiled beans (rajma), stir well & let it come to a boil & then cook until the beans thicken up.
Taste & adjust salt if required & the refried beans are ready.
Set a wok over high flame, add butter & let it melt.
Further add the cooked rice along with, fresh coriander, lemon juice, salt, stir well & cook for 2-3 minutes over high flame & the lemon coriander rice is ready.
Add all the ingredients of the pico de gallo into a bowl along with the sweet corn & mix well, pico de gallo is ready.
Similarly, add all the ingredients of the sauce into a bowl & mix well to make the burrito sauce.
To make the burrito add a layer of rice on a tortilla, then add all the remaining components, make sure you don’t overstuff or else it will be difficult to wrap the burrito.
Make sure to keep the fillings toward the middle & not too close to the edges, this will give you room to fold the tortilla properly.
Start by folding the left & right sides of the tortilla in towards the center, covering the edges of your fillings, then grab the bottom of the tortilla and fold it up over the fillings, then start rolling the burrito from the bottom, keeping the fillings tucked in, roll it till the top as tight as possible, when you reach the top fold the edges of the tortilla inwards & close it.
Toast it over a hot pan or skillet until it turns light golden brown from 2 sides & your delicious veg paneer burrito is ready.
To make the burrito bowl just add all the components of the burrito into a bowl one after the other & drizzle some burrito sauce from the top.
