Is anyone able to tell me why my rigatoni isn’t extruding smoothly out of the machine?

    What’s your dough recipe?

    What machine are you using?

    Your hydration is far too high and your shouldn’t be using soft wheat flour.

    Is there a reason you’re using water instead of egg?

    I always wanted a pasta extruder for rigatoni, etc but the more I research, most of the machines aren’t great.

    The best ones are really only commercial and cost accordingly.

    Any thoughts on them?
