Cooking on a half sheet pan on the grill is at least as good as the best convection oven.
Marinade idea – when it’s 90% cooked, drizzle with a mix of miso, mirin, sesame oil, grated garlic, and sake or rice wine vinegar. If you like spicy, add chili flicks or chili sesame oil.
