This quick and easy cornbread is Ready in Under 30 Minutes, a delightful, rustic side dish with a tender, crumbly texture and a hint of sweetness. Its golden-brown crust gives way to a soft, moist centre that pairs perfectly with savoury meals like chilli, stews, or grilled meats. The subtle corn flavour shines through, offering a warm, comforting bite with just the right balance of fluffiness and a slight crunch from the cornmeal. It’s simple yet satisfying, making it an ideal addition to any meal when you’re short on time but want something homemade and delicious.

  1. When they say don't over mix… They mean don't mix until the flour becomes very glutenous like sandwich bread. Just stir enough to keep it light and fluffy. 💕🌞🌵😷

  2. Thank you Rik. I am amazed at how people can watch your videos and still misunderstand what you say. I clearly heard you say, you were not getting rid of the crusts but saving them for another recipe. 🤦‍♂️🤷‍♂️ I am in anticipation of what it will be, really like this one though will be using it soon and often.

  3. Good morning Rick great recipe. What would cornmeal be in English? Haven’t seen it in the shops. Could we use polenta or is that something else?

  4. Oh, this is lovely and most welcome! Thank you for this quick and simple recipe. I only wish I'd had it two days ago when I threw together some chili. It would have been the perfect accompaniment 🙂

  5. That looks delicious. 😋 I have never had cornbread but I‘d like to try it. The crust is the best part of bread.

  6. Ooooh i love cornbread, always have it when over in USA but for some reason never eat it when home again.

Looks perfectly tastly, thank you Rik 👏🏻👏🏻👏🏻👏🏻👏🏻

  7. Good Afternoon Chef Rik! Made the most perfect pie crust using your recipe! Will be making this today. You look well and rested!

  8. ''Like the mix in a bowl, like the yeast in a roll

He's alive; he ain't dead, he's the soul to the bread, he's Cornbread (Cornbread!)

  9. I make cornbread without flour and only a teaspoon of sugar.

2 cups of cornmeal, 2 beaten eggs, 2 teaspoons of baking powder, 2 tablespoons of oil or melted bacon grease, 1 cup buttermilk, 1 teaspoon salt, 1/2 teaspoon of sugar.

Combine dry ingredients and add milk and eggs. Heat the oil in a cast iron skillet, swirl around the skillet to coat the bottom and sides, then add to the batter and stir it in quickly. Pour into the hot skillet, then put it into a hot oven.

  10. There are endless versions. Go wild 🙂 This is a good version, good one Rik. Big ole pot of beans and ham hocks and look out:) This is as Yankee as it gets 🙂

  11. Love it, Rik! You are speaking my language! I add fresh, sliced jalapeños and shredded cheddar cheese to my cornbread. Jalapeño cornbread is very delicious!
Thank you for sharing with us, Rik! 💜

  12. As a native of the American South, I have Opinions about adding sugar to cornbread, let alone wheat flour. I will reluctantly add as much as a tablespoon of sugar for my Northern inlaws, but a quarter cup for this amount of batter is edging firmly into cake territory.

  13. Looks reallly inviting!!
By the way Rik, what is a bait bun? I know it is popular in Tiwan. Perhaps you might feel it is worth a punt ?
Many thanks for all your advice on “laid-back” cooking. Stress free is the order of the day!! ❤

  14. I bought some cornmeal to make some corndogs and didn't know what to do with the rest of it, now I know. Do you have a recipe for corndogs Rik ?

  15. Sorry Rik, bao bun was not a trick question. I saw this advert with these buns which had fillings in them. I suppose they were a bit like a bun you get in McDonalds with one of their fillings. However, I thought you may know as you have lived out in the East etc. no disrespect on my part just curiosity. ❤️A

  16. That looks delicious. I've never had corn bread. I know that Elvis Presley ate it as a child and often did too as an adult, so I thought it must be nice. Thanks for sharing the recipe, Rik. I'll have to try it.

  17. Quick and easy, I put buttermilk into my Xmas cakes, it makes All the difference to the texture of many cakes.
Looks delicious xxx especially with some fresh cream!

  18. Love cornbread especially with chili. I also bake it on top of shepherd pie instead of potatoes. Another way to make cornbread is honey top cornbread. I bake about 1/2 the recommended time then give the top a really good drizzle of honey all over the top then finish the bake. Cheers
