Was tight on meal prep time today so I made use of a rotisserie chicken. Separated the legs (and wings) from the breast for different meal days and have a large bean salad to go with it.

Also kept the sweet potato on the side so it wont get too soggy with the salad. Just need to make my dressing fresh each day and Im good to go!

Im fortunate that I get to have my breakfasts at home, so I make it fresh, but I marinated and individually packed my chicken mince patties for my egg, chicken patty, cheese sandwich (shown in pic!)

Easily assembly in the morning!

    We recently added a rule (#6) requiring either a recipe or list of ingredients, since it is so often requested. If you wouldn’t mind adding that we’d appreciate it!

    Bean Salad Recipe:

    – 1 canned mixed beans

    – 1 can white beans

    – 3 persian cucumbers

    – handful of chopped parsley

    – 2 bell peppers

    – feta cheese

    I also put rotisserie chicken in a large container, is there anything i can do to add flavor?

    (I eat the chicken with basmati rice mixed with kimchi)
