Really wanted some steak so I got these Prime NY strips from Sam's Club. Wasn't able to dry brine them for more than an hour so I wasn't sure how they would turn out. Got the bro-and-sear full of hot coals. Just added salt, garlic powder and black pepper. Seared until crispy then put to the indirect side with the top on to finish cooking. Overall, I'm very satisfied, I pulled them right at 125 degrees and let the heat finish them to a warm pink center. GF made Rice-a-roni and Gatorwine for sides/Bev.

Overall 8.7/10. I wish I could get that wall to wall pink but a hard crispy sear beats uniform doneness any day in my book!
