I’m obsessed!!!

500g KA bread flour
325g water
115g starter
14g salt

Mixed. Rest for 30. Fold 4-5x. Rest for one hour (soccer practice). Fold 4-5x. Repeat for a total of 5 fold sessions. Shape. Bench rest for 30. Shape. Fridge for 48 hours. Preheated Dutch oven to 550 for one hour. Turn down to 490 degrees bake for 30 with lid on. Take lid off turn down to 460 and bake for 15 more mins. Cooled for 6 hours.
