Curry sweet potato soup, fried butternut squash,
and a lamb ragu
It held up pretty well for being frozen and
microwaved. I included a picture from the day I
made it for comparison.

Soup- sweet potatoes, butternut squash, celery,
onion, veg stock, oat milk, vegan butter
Squash-butternut squash, olive oil, five spice and
garam masala, salt and pepper, baked then fried
Lamb ragu- dried chilis and onions toasted and blended, red wine, vegan butter, lemon
juice, balsamic vinegar
I seared the meat, rubbed it in the chili paste, baked it, added red wine and beef stock, then left to simmer and reduce.

    Why are you using vegan butter in a meat dish? Why not just regular butter?

    Wow. The visual appeal of this from the first pic to the second is incredible. Before I read the caption or saw the second pic, I thought this was like a tub of slightly congealed nacho cheese or cheese whiz or something with some greasy Philly cheese steak meat on the side that you were trying to make into some sort of cursed sandwich. I literally gagged. Then, I swiped and thought. “Ohhh it’s some sort of Butternut squash soup with some tasty, homemade meat that looks braised, maybe?” And i even thought it looked attractive and nicely plated! Ive never seen such a good example of what a difference good plating can make. Then, I read the caption. Holy fuck. 10/10, would eat. Well done, OP.
