Orma(*) — Rome 09/28/24

    I visited Rome a few weeks ago and I was blown away by my meal at Orma.

    The restaurant only opened in summer 2023 and got their first star this past year. It is well deserved and was the most exciting fine dining meal I had in Italy. I visited Rome, Naples, and Sorrento so didn’t get a chance to visit the acclaimed restaurants in the north.

    I captioned everything to the best of my memory. The space is modern and open and the dinner starts in the bar area with the amuse bouche and welcome drink. Afterwards, they move you to the chef’s counter where chef Roy Caceres welcomes you with a deconstructed ceviche. Finally you’re led to your table for the rest of the evening.

    Service was fantastic, both in their attentiveness to us and also with the pacing of the meal. I also appreciated the lack of “fussiness”/more casual approach to service than you may find at other European fine dining restaurants.

    The meal really showcased the international background of chef Carceres, who has Colombian heritage and has tons of experience with Latin flavors and Asian cooking techniques. The whole approach to dinner felt inventive and fresh. The tomato salad was beautifully presented with razor thin tomatoes on top, I loved the mix of oysters and peaches, and I would not have expected one of the better moles I’ve eaten ever (the black sheep mole at the end of the savory) to be served in Italy.

    Orma outshines their first star IMO and is on their way to more. I know that there has been some skepticism on the quality of fine dining in Rome on this sub, but Orma is definitely bucking that trend and I would highly recommend it for anyone visiting Rome in the future.
