WHITE BEAN BUTTERNUT SQUASH SOUP
1 onion diced
4 shiitake mushrooms + large handful of oyster mushrooms, chopped
1 red bell pepper diced
1 medium sized butternut squash peeled and chopped
3 cans white kidney beans/ great northern beans, drained and rinsed
1 large bunch of greens like kale or collards
4 cups veg broth
2 tsp poultry seasoning
2 tsp Italian seasoning
1.5 TBsp Italian sofrito seasoning- TJ. OR use more Italian seasoning + red pepper flakes
1/2 tsp black pepper
pinch of red pepper flakes
pressure cook for 8 minutes, natural release for 20 minutes
when its done stir in 1/4 cup of raw almond butter and mash up the white beans a bit

PUMPKIN COOKIES
Ingredients  
1/2 cup oat flour (lightly packed)
1/2 cup almond flour (lightly packed)
1/4 cup protein powder (packed) vanilla or plain unflavored, I use pea protein
1 tsp baking powder
1/2 tsp baking soda

3/4 cup pumpkin puree
3/4 cup date sugar or coconut sugar
1/3 cup creamy almond butter
1 tsp pumpkin pie spice
1/2 tsp ceylon cinnamon
1/2 tsp vanilla bean powder or extract
1 egg or flax egg flax egg- 1 tbsp ground flax + 3 tbsp milk
chocolate chips
STEPS- mix wet and dry ingredients separately then combine them together. Bake at 350 for ~20 minutes.

PUMPKIN SPICE CREAMI ICECREAM
3/4 cup pumpkin puree
8 walnut halves
2 or 3 large pitted medjool dates
1 scoop vanilla protein powder
1/2 tsp pumpkin pie spice
1 tsp ceylon cinnamon
1 cup water or almond milk

  1. Funny story about baby squashy. In the Netherlands we have a similar satire Christmas song called “Flappie” about a bunny that ends in a similar way by becoming the main course on Christmas day. The child then takes revenge by having his dad as the main course the second day of Christmas (we celebrate that here). It is quite famous here haha. It is called Flappie by Joup van ‘t Hek if you want to look it up and translate the lyrics

  8. I had three rotating ice packs for my laptop this summer so I totally get refrigerating your phone. I used the lid of a Styrofoam delivery box, put a ice pack wrapped in a tea towel in the side that had a depression and then my computer on top of that. I didn't get super high temps but high enough that my computer would just stop working.

  9. I worked for the man who made walnuts famous! I will tell you a funny story. Every time he had a memory lapse he would say, “oops, I forgot to eat eat my walnuts today” 😂

  12. Hey Chanty, love your videos! When you are transferring soup, use a big ladle for the first 2-3 scoops, then you should be able to pour with less splash zone! It's nice to see fall coming in, and I would love to try your cookie recipe! Thanks as always for the share 🙂

    I can’t meal prep due to chronic illness, so I love watching these videos. I do want to make that coleslaw tofu salad. I never through of preparing tofu that way before!
