Good morning Sourdough friends !
I have made this bread and put something around 80% hydration. The holes aren’t large enough tho and it’s still kinda doughy ? But perfectly fine to eat and tastes great !

Here’s the recipe I used:
30g starter
400ml water
500g flour
9g salt

Mix water and starter . Add flour. Let sit 10 minutes and then add salt and knead for 10 minutes. Let rise for 8-12 hours (I did 9)
Knead a little and then let rise for two hours. Oven to 240° and 25 minutes covered bake. Remove cover and another 10 minutes 🙂
