Ingredients:

1 lb chicken (bone-in for richer broth)
6 cups chicken broth
1 star anise

1 medium onion, halved
8 oz rice noodles
2 tbsp fish sauce
Salt to taste

Instructions:

In your soup pot, char the onion and ginger by placing them directly on a hot burner for a few minutes.
