Hi everyone I tried 2 new recipes from Ball's website and I am concerned with the bruschetta cans.

I didn't realize how long it would take and I got a bit sleepy and misread the ingredients as 1 cup of water instead of 1/2 cup. I followed the directions for everything else.

Are these bubbles normal after the 18 hour resting mark? since I messed up the water ratio is it even safe??

First 3 pictures were right after they cooked down from the water bath and the last 2 are what the bubbles look like if I move the can.

Also, I'm new to pickling with the water bath method and wanted tips for how to pack the peppers in the jar. At first I over packed them leading to incorrect headspace and then I took some out and didn't have as many as I'd like (lots of liquid)

I feel really defeated and have been extremely stressed about the bruschetta.

    first, are the bubbles being created or do they just sit there.

    I worry about a couple things. first, taste-wise, 1 cup of water will be a vastly different taste than 1/2cup of water. But also I worry about fermenting or something happening – that is why I was asking about the bubbles. the water ratio to acid is very important in water bath canning. that’s what helps keep food safe. you can do a lot of things with recipes if you keep the core fundamentals correct. more water is less safe in a recipe…just like using a weaker vinegar or real lemon juice vs bottles lemon juice is less safe (per US rules at least).

    if they are creating bubbles….let them sit for a bit and watch…then yes. you lost the whole batch.

    if you don’t think it is creating bubbles and maybe the bubbles are from handling the jars, then I would still recommend opening up a jar. see if it still sealed or if it pops off too easy. see if there is an off scent or look. if it has only been a couple days and looks OK and smells ok and everything else seems normal, then you might be ok. I would probably recommend keeping in the fridge.

    if there is any doubt, throw it out.

    I am assuming that you tried it before you canned it so only you can answer if the flavor profile was ruined.
