Recipe:

Ingredients
* 2 T Coconut oil
* 2 T Coriander, Ground
* 1 T Turmeric, Ground
* 1 t Cumin, Ground
* 2 T Harissa Chili Paste
* 1 T Fresh Ginger, Diced
* 3 Cloves Garlic, Minced
* 1 Medium Onion, Diced
* 2 Jalapeños, Diced
* 2 C Tomatoes, Diced
* 1.5 C Chickpeas, Cooked
* .75 C Red or Yellow Lentils
* 1 C Vegetable Stock or Water
* 1.5 T Raw Honey
* 1 t cilantro, chopped
* 1 t parsley chopped

Directions
1. Bring a 4-quart saucepan to medium heat. Add oil and spices, gently swirl until spices begin to sizzle and become aromatic, about 2-3 minutes.
3. Add onions, peppers, ginger, garlic, and to the oil. Gently stir to keep mixture from burning. Cook for abut 2-3 minutes until the vegetables begin to soften.
5. Next, fold in tomatoes, chickpeas, lentils and harissa (if adding). Turn heat to medium-low.
6. Once the mixture has begun to simmer, stir gently to lift any spices that may be sticking to the bottom of the pan, and add stock or water.
7. Cover and turn heat to low. Simmer for 15 minutes until lentils are tender and mixture has thickened. Fold in remaining ingredients and serve hot with rice (optional)

NOTES
Harrissa is a spicy roasted pepper paste that is mostly used in Tunisian, Libyan and Algerian cooking, but has also made it’s way into Moroccan and Middle Eastern cuisines as well. You can find Harissa at most asian/european grocery stores and markets.
