I’ve been trying to get more fiber in my diet and I think I’ve found my favorite breakfast! On my weekend I’ll chop up all the veggies and par cook them. The morning of I toss everything in a pan as I make my coffee. If I’m feeling fancy I’ll even grate some parmesan on top.
Veggie hash: potato, zucchini, yellow squash, onion, mushroom, frozen sweet potato and frozen spinach.
