Hi there,

this is my 3rd focaccia, I am fairly new in bread making and want to get better. Could you rate it, or let me know any faults that you can see in the photos? How can I make it better?

Ingredients: 850g 00 flour, 700g water, 20g fresh yeast, 17g salt, a bit of sugar to help the yeast and a looooot of my homemmade extra virgin olive oil. Toppings are the ones you see + a bit of coarse salt.

    That is so beautiful! The only thing I would add is more dimples! Really dig your fingers through to give it that focaccia umpf. I press my fingers down the the bottom and even wiggle them a little bit. The dough will push out anything less. Nom nom nom

    Not bad for 3rd time,I’ll agree with some others on the tread,more bubbles,add the water throughout the whole mixing process,not all at once. Also “punch/fold the dough twice with 45-minutes between to strengthen the dough. Best of luck

    Looks so awesome! I found my bubbles in the center were better with bread flour (or any high protein flour)! Awesome though!!! Love the toppings

    I’m going to go at a 7/10, but not for the reason you might imagine. The bread looks perfectly fine, little less bubbly than normal, but that happens. No, the missing points are for the whole rosemary twigs. Not only is the flavor likely to be overpowering in that area, rosemary in that format is nearly inedible. While I like the look, I don’t like the choice of either chewing essentially a line one for texture, or having to remove it prior to eating.

    In the professional kitchen, we have a rule: if you can’t eat it, or something makes the food harder or less pleasant to eat, we find another way.
