Mediterranean Stuffed Bell Peppers (Greece)

Ingredients
4 large bell peppers
1 cup cooked quinoa or rice
1/2 cup feta cheese, crumbled
1/4 cup kalamata olives, chopped
1/4 cup sun-dried tomatoes, chopped
2 tbsp olive oil
Salt and pepper to taste
Fresh parsley for garnish

Method of Preparation
1 Preheat oven to 180°C (350°F)
2 Cut off the tops of the bell peppers and remove the seeds
3 In a bowl, combine cooked quinoa or rice, feta cheese, olives, sun-dried tomatoes, olive oil, salt, and pepper
4 Stuff the bell peppers with the mixture and place in a baking dish
5 Bake for 25-30 minutes until the peppers are tender
6 Garnish with fresh parsley before serving
