Prep for the week. Lunch- Chicken Pad Thai. Dinner- Air fried fish and beetroot roti. Dessert- Beetroot halwa.

    Chicken pad Thai:
    Chicken marinade: soy sauce, garlic powder, chilli flakes and pepper. Cooked separately.
    I’ve used potato starch glass noodles boiled in water.
    Sauce: soy sauce, tamarind paste, honey, chilli sauce, fish sauce and lemon juice.
    To a pan add some oil, onions and garlic. You can scramble eggs at this point(optional). Add in the noodles and the sauce. Mix well and add the chicken. Once done, garnish with crushed peanuts, green onions and bean sprouts(optional).

    Fish fry marinade: Turmeric, chilli, coriander powder, pepper, salt and lemon juice.

    Beetroot purée mixed with wheat dough for the rotis.
    Leftover purée with some palm sugar boiled till it thickens. You can boil it with milk and add some thick cream. Garnish with cashews and raisin.

  2. Hi there I want to try Pad Thai for meal prep too but am not sure if it holds up in the fridge for long 🙂
