crumb is a bit tighter than i’d like (probably could’ve let bulk fermentation go a littler longer) and i had to score with a kitchen knife because i don’t have a bread lame. but overall pretty happy with it. i followed the basil & bloom tried and true sourdough recipe.

    380 g bread flour

    65 g whole wheat flour

    325 g water

    10 g salt

    127.5 g 100% hydration starter
