    (Makes 2 regular pizzas)

    Biga –

    300g Flour
    150g Water
    1g Instant Yeast

    Rest at 18C for 18 hours or 1h at room temp followed by 36hours in the fridge

    Main Dough –

    All of Biga
    70g Water
    8g Salt

    Knead until window pane, divide dough into 2 equal portions, proof until double

    Shape, add toppings and bake at 425C for 90secs

    Or 250C for 5-8 min
