Beautiful proof of what happens if you accidentally grill the dough…
600g wheat flour, 100g rye wholewheat
500g water
15g salt
200g starter

30min autolyse, 3 strech and folds, bulk fermentation over night. Then bake with lots and lots of heat on grill setting. If your home begins to smell of burnt bread, you are done.

    Hi. Hope you like charcoal. Looks like it could have used a little longer in the oven – slightly gummy apperance inside. Maybe protect crust from direct heat with foil cover!

    Mine ended up like this once when I grabbed the shaker with icing sugar instead of the shaker with rice flour for coating the banneton 😬
