That sort of cut is better at medium than medium rare – more time to render the fat on it. Medium rare is really best for lean stuff. You did fine.

What kinda pan is that. It looks like a nonstick of some sort. If it is, then the high temps needed for searing will cause it to “gas off” which can be very unhealthy over time. Treat yourself to a cast iron pan. They don’t have to be expensive. Lodge makes great pans that will literally last a lifetime. And besides being healthier for you, will hold heat way better to help you get the quick sear and keep the middle pinker.
