Mushroom and Spinach Quiche

Ingredients:
1 single pie crust, unbaked
6 large eggs
1/4 cup of whole milk
1/4 cup of half/half
5 oz of spinach
8 oz of white mushrooms
1/2 cup of green onions
1 1/2 cup shredded Monterey jack cheese
1 tsp salt
1 tsp pepper
1 tbls olive oil

Turn oven to 375° and press uncooked pie crust in an oiled/sprayed 9” pie pan.

On stove top in sauce pan, cook mushrooms on medium heat in olive oil until cooked down (about 6 min). Add all spinach and turn heat down, cover with lid.

Scramble all 6 eggs in mixing bowl and mix in salt, pepper, green onions, milk, half/half, and cheese.

Once spinach is wilted fold in mushroom and spinach to egg mixture. And mix well.

Pour mixture into pie crust and bake in oven for 30-40 minutes, until golden brown on top and eggs are cooked through.

Let rest for 10 minutes. And then ENJOY!
