3 large shallots
6 garlic cloves
2 ears corn
1 red Fresno chili or ¾ teaspoon red pepper flakes
1 small bunch mint or basil
2 lemons
PANTRY
6 anchovies
¾ cup all-purpose flour
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus additional as necessary
DAIRY
6 tablespoons unsalted butter
1 ½ cups buttermilk
MEAT
2 pounds boneless, skinless chicken thighs

A good trick for taking kernels off corn is to invert a bowl into a larger bowl – gives you the clearance for your knife, and the large bowl catches the kernels.
