This week’s meal prep for my husband is shorter thanks to the holiday. Here’s what’s on the menu:

Sides:

  • Rice
  • Butter-soy seasoned green peas
  • 24 eggs, scrambled and tamagoyaki (rolled omelette)
  • Store bought shumai, steamed.

This all gets packed in his cooler with yogurt and fruit cups. Only 3-4 more weeks of meal prepping for him left—phew!
